I have a flow the idea is the following
You fill out the sharepoint form and then with Power Automate send an approval in teams, the flow works correctly for me, the problem I have is that in assigned to: it works for me if I put a specific email (this method does not work for what I need ), what I need is that if in sharepoint in the box called "Gerencia" I put a user, I need that user to receive the form so they can approve it, how can I do this?

This looks good. I think the only thing you need to do is use the dynamic content from your "people picker" column for Manager and select Gerencia/Email. That will by the approval dynamic for each approver and item.
