Help with convert to Pdf date format

I have built a flow whereby I have populated a Word Document from a SharePoint List and convert the Document to Pdf using One Convert File (preview). The document is then attached to an email and distributed to those on the SharePoint list.

In testing, everything performed as expected however the list contains dates which are merged onto the document and when I open the Pdf within the email the date format is yyyy/MM/dd. As I am in the UK and the email recipients will always be in the UK I would like to adjust the format so that the Pdf attachment will have the dd/MM/yyyy format. Is this something that can be done prior to the covert to Pdf eg through a compose action and if so could someone please explain to me what to do? Many thanks for your help. When you are populating the Word document, you can use the formatDatetime() expression to format the date fields to your desired format. You can learn more at formatDateTime to Format Dates with Power Automate (sharepains.com)
