The site inspection app does not provide option to save the data to a SharePoint list or Database. Is there guidance to change the data source to SharePoint?

Currently the sample apps all do not support to add sharepoint as the direct data connector. If you want to use it, you will have to create the app from blank and create your own step by step refering to the sample app.
In addition, you could vote on this idea if you want the sample apps to be improved:
