Power Query: Unpivot columns option not visible in the ribbon – what am I missing?

Scenario
I am working with Power Query in Excel using two separate Excel source files:
  • Previous
  • Current
Both sources are loaded into an analysis workbook that contains all Power Query queries.
I merged the two queries using a Full Outer Join on the column PolicyNumber (selected in both tables).
The merge itself works as expected and produces a readable combined result.
 
Problem
In the next step, I want to make the output readable by unpivoting columns.
However, this is where I get stuck:
  • The Unpivot Columns option is not visible in the ribbon
  • The icon/function is also not available when customizing the ribbon
  • According to Microsoft documentation, this functionality should be available
Because the Unpivot option is not visible, I cannot proceed with reshaping the data.
 
What I am trying to achieve
  • Convert the merged output into a normalized structure
  • Use Unpivot as the next transformation step
  • Do this using standard Power Query functionality (no custom M code preferred)

Questions
  1. What am I missing here?
  2. Is there a specific context, selection, or prerequisite required for the Unpivot option to appear in the ribbon?
Any clarification would be appreciated.

    Please use "Waarden vervangen"  to unpivot.

    Thank you for the explanation @lbendlin and @CU31011329-0,
     
    I tested the proposed solution. Unfortunately the feature 'Waarde vervangen' (= 'Replace value') is not the same as the 'Unpivot' feature, because it replace one value with another value. So the issue remains unresolved.
     
    I may be overlooking an additional condition or context. Any further guidance would be appreciated.
