I am looking to change the layout of a gallery. I dont want to use any of the default layouts. Is their a way to make my own layout?

Yes, of course. You can configure those controls in its template. The template appears as the first item inside the gallery, on the left edge of a Gallery control in horizontal/landscape orientation and at the top of a Gallery control in vertical/portrait orientation. You could delete the controls inside the template part and add your own ones.
