In cloud you can use compose. Is there are way to manipulate string data within PAD?

You can use regex and get the text what you need.....
Or you can use split activity....
If you have power fx enabled you can use split function or concatenate......whatever...you need for your scenario....

To manipulate string variables in Power Automate Desktop, you'll find a plethora of options within the text package. Please refer to the screenshot below, which showcases the wide array of options available for string manipulation.
