I have a flow set up to trigger when an items conditioning days are modified. How do I delay the email being sent by the modified data?

If you have a timestamp, use Delay Until. If its a count (e.g. days, minutes) then use Delay.
Depends on what data you have that was modified therefore.
The modified data is a date. The current formula I have for that column uses the first one created and not the modified one.
