The delete button in Copilot Studio is broken, so you need to delete the connection from the backend.
Go to make.powerapps.com. In the top-right corner, switch to the environment where your Copilot agent lives.
On the left sidebar, click More, then Connections. Find your SAP OData connection, click the three dots, and delete it.
Refresh Copilot Studio and the stuck connection should be gone.
