I would like to know, that how can I create a PowerApp custom connector to fetch the data from Microsoft Customer Insights and how to use it in my PCF controls.

Could you please share a bit more about the Microsoft Customer Insights that you mentioned? Do you mean the Dynamics 365 Customer Insights?
If the Microsoft Customer Insights that you mentioned is the Dynamics 365 Customer Insights, I think it is not necessary to create a custom connector based on the Customer Insights service in your PowerApps. The Dynamics 365 Customer Insights connector is now supported in PowerApps.

In addition, if you want to use the Dynamics 365 Customer Insights connector within your custom PCF control, you must create a PCF control with data set type rather than field type.

As per Microsoft documentation, it is only available in Canvas Apps not in customer PCF controls either I use Dataset or Field type template. I really appreciate if you can share any resource that has steps to get it done.
Yeah, you are right. The DataSet Type PCF control is only supported in Model-Driven app rather than canvas app. If you want to list the Customer Insights records within the PCF control in your canvas app, I afraid that there is no way to achieve your needs.
