I want to identify email without subject and send it back to sender for example.
But my main problem is, how do say Power Automate to identify the empty subject line and not throw an error out.

I make a demo for your reference:
length(triggerOutputs()?['body/subject'])
The condition means if subject is empty, "If yes" branch will reply a mail to sender.

You could in fact use the trigger conditions to make the flow only run when the subject is empty, instead of triggering on each email received.
