With many other systems a daily backup is made and I can restore it myself.
What is the situation with Dataverse?Can I call Microsoft and ask them to restore the previous day?

Yes you can open a support ticket for Microsoft and they can restore it for you.

Dataverse system backups and manual backups can help you take the backup of your data.
You can also restore backups from Admin center.

As @bipinshan mentioned, Microsoft system backups are possible. However, it backs up the whole Power Platform environment, and restores are manual.
If you want the more flexible solution, try FluentPro Backup for Dataverse backup and restore. It provides automated continuous backup, so that you can restore specific table versions automatically. Please, see the comparison of Microsoft system backup and FluentPro Backup.
