ComboBox Bug - Not showing items sometimes

Hello, I'm finding an odd behaviour with comboboxes in a Form. The comboboxes sometimes show the values in the dropdown, sometimes they don't. Sometimes it shows no values but allows me to search, sometimes it doesn't allow me to search.

I've tried to add a new form but the behaviour repeats itself, I tried to export the app as a package and import it again, and it is still happening, sometimes it shows the items sometimes it doesn't. There doens't seem to be any pattern.

This data is coming from a sharepoint list. There's no code I can post in here as it is just using the standard code from a PowerApps form connection such as

Choices([@'NCR Tracker'].Category)

I've built dozens upon dozens of apps before and never experienced this until the past 2 or 3 months when this behaviour started happening.

Any idea whatsoever of what's happening?

Please share more pictures of the scenarios, versus just saying them.

I cannot tell from that pictures if you have the items set, if you have search on or multi select etc.

No there's no Multi Select enabled and...there's nothing else to post in here other than the same image with names in it and the image without names in it...As per my post, sometimes it allows me to search sometimes it doesn't, which means yes Search is enabled, but sometimes it searches and sometimes it doesn't like in the picture above on the original post where I'm searching, but getting no results. I don't know what else to tell you...
