Use different commercial invoice models in a power automate process

Hi group.

I need to perform a power automate process to read invoices that arrive via Outlook email and pass their data to an Excel table. The problem is that there are different models of invoices, so I don't know how to carry out the AI process.
How should I do it?

I think this can help to build an AI Model which helps to process different document types.

If you have a scenario with many different document formats/styles I suggest doing OCR on the document & feeding the document text to GPT for extraction, like in this template: https://community.powerplatform.com/galleries/gallery-posts/?postid=31e67eea-3f73-47b4-95b7-fe4a7b646389
