Updated environment variables - now form lost connection (all fields are custom)

I wanted to standardize the naming convention of my environment variables. Therefore I deleted them and set the up new. 
What I did not forsee was, that within the PowerApp, all forms lost the connection to the tables. Now everything is a custom field and I cannot edit them via the graphical user interface. Is there any way, to connect them again correctly? I dont want to set them up newly, as there is a lot of formulas involved and I have to change references within the formula etc.

    First check Version History and restore a version from before the environment variable changes.
     
    In most cases, that's the quickest recovery path. If no usable version exists, verify that the form's DataSource is still pointing to the correct table
     
    and inspect a few cards' DataField properties.
     
    If those bindings are still present, you may be able to reconnect the form without rebuilding formulas.
     
    If the DataField metadata has been lost entirely, restoring an earlier version is typically the only practical solution.
