How to Access Created Workflow Approvals through API or Postman
You can use the Dataverse API and query the approval tables.

I haven't used the Dataverse API myself yet, but here is the documentation: Use the Microsoft Dataverse Web API (Dataverse) - Power Apps | Microsoft Learn
and this are the main tables you need to work with:
Microsoft provides hardly any documentation about those approval tables.
