Hi
is there a way to provide a calendar in conversation so that the customer can choose a date and time
rather than having to reply with e.g. 10:00 10/2/2021 ?

Yes, I would say that would be possible via the Bot Framework composer.
You should be able to present an Adaptive card with date.input control.
