Yesterday my flow that pull data from App insights were working flawlessly. Today I ge a 500 server error when trying to use the connector. Anyone else having this problem?

Could you please share a screenshot of your flow’s configuration?
Could you please show a bit more about the server error?
I suppose that you use “Azure Application Insights (Preview)” connector in your flow. Is it true?
The 500 error is a temporary or transient failure, please try to click Resubmit to try the flow gain and check if the issue is solved.
In addition, please take a try to re-add a new connection to that connector and check if the issue is solved.
Also please take a try to remove the connector and re-create a new one.
