    Welcome to the forums.

Your request is straight forward, but I must push back a little as there are many examples of the steps you want to take (like a ton), versus us writing everyone's flows, we are a sort of educational, free support channel.

So I will give you the basics, then please attempt to write the flow yourself, and then ask specific questions if you are stuck, as well as some of your details are not 100% clear

    1. Filter for activities that are due in the next 3 days.
This, doesn't really make complete sense to me. If I were to say on Monday the 11th, tell me all activities due on 11, 12, 13... then on the 12th I run, I am again going to include 12, 13 and now 14. Do you want to include the same overlapping days, or do you want this flow to RUN every 3 days so that it only picks up 3 days of stuff.. then waits 3 days to run again? Does it include the day it runs, so in my example on Monday the 11th, or does it run on Monday the 11th but look at 12, 13, 14???

Either way, you need to create a Scheduled Flow, which allows you can tell it how often to run, that is step 1.

    2. Delete activities that are already in 'Completed' status.
Is this part of the same flow that runs the activities? Do you need this done before or after filtering the next 3 days. Or is this looking only at the day it runs?

In this you will need to use
Get Items action for SharePoint, with a Filter for your Completed Status
if it was a string field, and you called the field IsCompleted
and if the string you put in was true or false you would filter like this
      IsCompleted eq 'true'

Then you would use an Apply to Each action to loop through all those filtered Actions
Inside the Apply to each you would put a Delete action, leveraging the SharePoint ID, you are getting from the Apply to each Loop iteration

    3. If there are activities close to the due date, send an email automatically, reminding the person in charge to complete the task.

Again, this is a completely different thing. So how close? 1 day? 2 days? 3days?
Or if you say, "every day within 3 days of when its due, send them one) meaning they get more than one

For this you have to answer the questions for clarity, but let's say you want to check for tasks that are within 7 days of Due Date

You would have to use Get Items action again
Filter on the Due Date, where the dateDiff (expression) between Today and Due date is <= 7
Then you would have an Apply to each again
Inside the apply to each, you would use the Send Email V2 action to send them a reminder

noting that in my example you would send them 7 reminders

    Cheers
