Is it possible to connect multiple SharePoint lists to one gallery using a single connector?

Hi @NemanjaT ,A gallery can only accept one data source - if the lists are related, you can use AddColumns to retrieve matching records from the second list, but other than that , you cannot do it.

In that case, is it maybe possible to change the data source through the application, depending on the logged-in application user, without using multiple connectors?

That would need to be hard-coded and you would need a collection. Also I suggest you use ShowColumns() so the data sets are exactly the same in both instances.
