Hi,
Can the From: email name generated from "Send an email notification" step be changed from Microsoft PowerApps and Flow to another more friendly name?

Currently there is no option to change the "From" email name when using the "Send an email notification" action.
You may want to suggest this in Flow ideas.

As Scott said, there is currently no way to change the "From" of auto-generated emails. You could consider submitting your suggestions in Flow Idea.
In addition, you could also try to configure Send an email action directly, fill in the reminder information in the body or Subject, and configure the From field. Maybe this can meet your needs.
