Assignment of Category as trigger in Outlook?

What it says on the tin. I want to build a flow which sends an email to let someone know that an email in a shared inbox has been assigned to their custom category. Things to note:

  I can't assign categories to new emails automatically using inbox rules as I need to read them first to decide who should handle them.
  I can't use any external apps that aren't provided with 365 as standard due to my organisation's security settings. 
  People tend to use outlook desktop.
 
Some Googling suggests that this isn't possible, but surely there is a workaround?  If I mark an email as unread, would Automate see it as a 'new' email?

    Take a look at this from Microsoft: Triage incoming emails with Power Automate - Azure AI services | Microsoft Learn. I think this is what you're trying to do. However, if you don't consider AI Builder a standard part of Microsoft 365, then I would agree with Google that this isn't possible.
     
    As for the question about marking an item as unread, no, the workflow will not consider that as a new email. There is a trigger that will run when you flag an e-mail, so you may want to use that instead. If I remember, you can set it to run only if the e-mail is flagged in a specific folder.
