How can I add more data to this field?

I have a field named Person Assigned that is a Person or Group data type. I have now enabled it to have multiple selections and it has now become an array. Previously, I would store the Person Assigned value in Email Notification, also a Person or Group data type, but now that Person Assigned is an array how can I still do this? I would use Send an Http Request to add the Person Assigned data to Email Notification but now that its an array I'm not sure how I can add onto the already existing data within Email Notification. I hope what I'm saying is making sense.

No need to do it with a http request.

You can use the update item action

This would only work if you manually enter emails correct? I am trying to set the field equal to an unknown amount of emails. It may be 3 or sometimes it may be 1.
