Need help with Initializing Variables

Hello, 

 

I am fairly new to Power Automate and I had a quick question about a flow I created. I have connected the flow to a choice column in SharePoint and I do not know how to amend the flow to list the strings as individual choices in the SharePoint list and in the email. 

 

Current Flow:
