power automate will not update choice column 'get items' when the value is deleted

I'm using power automates 'get items' to copy and update SharePoint list items from one list to another. Everything works when I update items or change the value of choice column items. but if I completely delete the value, the destination list will retain the previous value that was entered. The if I enter a new value in my source list, my destination list will update again?

I think this changed after the mass push out of co-pilot. My flow was created previously and now I'm trying to update it.

Any ideas if there is a setting I'm missing or why this is happening?

Below is a picture of a get item before the co-pilot upgrade.

After the co-pilot upgrade, I'm updating a get items with a dynamic value (same as I did before the upgrade), and now below is what power automate creates?

I also tried to manually type in the fx with "triggerOutputs" syntax, but I get something like this for my value in sharepoint.

    {"@odata.type":"#Microsoft.Azure.Connectors.SharePoint.SPListExpandedReference","Id":-1,"Value":"

@bbarlage  this page shows instructions about how to change a choice back to blank.

    https://natechamberlain.com/2023/01/06/how-to-reset-a-sharepoint-column-value-to-blank-using-power-automate/

It is basically saying to Initialize a Variable that is a String type. Before the Update Item, have a Set Variable to the dynamic content. Then use the variable as the value for the choice. When the variable is blank/empty it will changes the choice to blank.

Thank you @wskinnermctc !! I will work through your instructions and update, but I think this is what I was looking for.
@ScottShearer , next time please read a users question before asking them to waste their time to take screenshots for no reason.
