HI,
is there any way to create a dashboard, or customise the view of flows so as to see when they were run last and whether they were successful without having to go into each flow?

A couple of things you can try:
1. COE tool kit that gives you entire admin overview of all Power Platform components in the tenant/ environment https://powerapps.microsoft.com/en-us/blog/introducing-the-powerapps-center-of-excellence-starter-kit/
2. Analytics page of the flows that can give you a collective overview of how many flows were successful, what are the most actions failed etc.
3. Power Clarity app that gives you more control and detailed info on the flows in your environment/ tenant. https://powerclarity.app/
