Dynamic Invocation issues to select data

Hi

I'm trying to send a survey using Customer Voice, something I've done in flows quite a bit.

However, the 'dynamic invocation' is not working completely and making life hard. It starts with not seeing all the Projects that I have access to in the Projects dropdown. On the left are all the projects, but on the right, only some are visible in the drop down. I'm trying to send a survey in the Programmes Portal Project:

I have overcome this before by using Environment Variables to input the custom data. However, even this isn't working. Here, I have my Project Id (for the Programmes Portal) in an Environment Variable. Normally this has been good enough to trigger the dynamic invocation for the next field, but not today:

This is an issue, because after selecting the email template, I need my personalisation variable to show. And when I input all the values as Environment Variables, it doesn't bring in the custom personalisation variables in my survey.

Are there any thoughts as to how I can get Power Automate to show all the Projects I have access to?

I have tried clearing my browser cache but that didn't help...

EDIT: I've noticed that all the Project I can't see are in our default environment. Projects in other environments are showing. My flow is in the default environment though. Are there some permissions I can check? My user is a System Administrator in both all environments.
