People Field property DisplayFields not respected

I'm updating an app that sits on top of a sharepoint list.  The initial list had 4 people picker fields, in which when you drop down, you can see their Picture, Name, and Email address. via the property (DisplayFields with the value ["DisplayName","Email","Picture"] See pic:

I've added 4 additional people picker fields, with the same setup and they're not behaving the same way.  They only show the Display Name even though the property is set up the same way.  See pic:

Is there something that could be causing this, or an overall app limitation on the number of people fields?

    @yarondr - what happens if you set the Layout property to Person?
