I know we're able to create environments, under which we can configure data loss prevention policies to set available/unavailable connectors. But what about the default environment named as our tenant? Can we also limit the connectors in this default environments? Thank you.

Thank you. I also did some tests, and I found my account, being as a SharePoint admin, doesn't have any option for setting the default environment. Only global admin of the O365 tenant has the access. Maybe we need to add my account into the Environment Admin lists of the default environment in advance.

Do you want to create a DLP policy in your default environment of Microsoft Flow via Flow Admin Center?
I have made a test on my side and I could set a DLP policy in my default environment of Microsoft Flow.
If you want to set a DLP policy in your default environment of Microsoft Flow, please make sure that your login in account of Microsoft Flow is a Environment Admin role. In other words, your login in account of Microsoft Flow is an Environment Admin user of your default environment.
