My company currently manages 30 associations (4000+ doors); the end game is to create a commmunication log for each association. At this time I am trying to figure out the most efficent way to create these logs.
Each association has a manager, assistant, and the accounting team; in total each association typically comunicates with 5-6 staff members/outlook emails.

Each office 365 connection is to a different account, I wanted to confirm that this is set up correctly.
Yes, you can assign accounts at the flow step level (action or triggers). Hit the eplipsis (...) on the step, and choose the connection under My connections:

You'd probably want a Flow for each HOA since there are about 30 of them. You could have them all in a single Flow, but that would get unwieldy, and would likely affect overall Flow performance. You don't need 30 Flow licenses for this, you only need a Flow license for the Flow author.
For the emails, you could setup a SharePoint List that would include HOA, Subject and Body columns that could be updated as new emails are to be sent. Then, when the Subject and Body columns are updated, you can have the When an item is created or modified trigger the sending of the email, with the contets of the Subject and Body column being passed through.
There are many ways you could accomplish this, it just depends on your data, environment and usage.
