Hello.
Out of curiosity, when a flow is tasked to update an item in Sharepoint, who is shown as updating/modifying the record? And can it be changed?
And does it make a difference if i pull in the User Profile?

Modified by and created by will always show the user name of the flow creator. Unless you are a site administrator, I don't believe you can override this.
