I upgraded Powerapps to 2.0.69 - but there is a bug in this version that is prohibitting me from editting my App (without ruining it).
Is there a way for me to roll back to version 2.0.68 until the bug is patched?

Sorry to say that currently there is no way to "roll back", for PowerApps.
PowerApps is a service, for PowerApps studio in web, it is all synced, and there is no "roll back " option to remove the new updates.
For PowerApps studio in Desktop, as it is installed from Windows Store, we can only update through Windows Update for newly updated App packages, there is no way to roll back to the old version, as there is no place to keep the old package.
