Hello,
I have a SharePoint List with 3 different drop-down (1 single select and 2 multiple select) columns. I need to create a flow that creates an item in a second list. I'm not sure if I should use variables or select for these 3 column types. I would appreciate some guidance on how to set up this part of the flow.

If I understood correctly you want to select something on these drop-down options and once you are done = create a new item in another SharePoint list with the information selected on these drop-downs?
It is up to you in that case, but I would add a button to confirm the creation of the item in list 2, and then use formulas to pull information from list 1 selected option in drop-downs and create new item using Patch function that way.
