Ok, this is weird and goes like this:
I edited my flow and changed one field/dynamic variable. I saved the flow with a successful saved message. I exited, and then reentered the flow. The variable is now back to what it was before the change - as if it didn't save. From now on, for every change i make, i need to set this variable to the desired value.
Anyone encountered this? I've cleared my cache, tried different browsers, crossed my fingers, put on my lucky socks but to no avail.

Only fix is to delete the action itself and rebuild it. I've had it happen a couple times.
