I use post a choice of options as the flow bot to a user and send to recipient 2 people.
I want get email that who response in message in post message in a chat action.

I would say you could use the userid of the responder to retrieve mail via a get user profile.
Below is an example of that approach.
However, are multiple recipients even supported in that post a choice action?

Unfortunately, the Teams - Post a choice of options as the Flow bot to a user action, as the title says, is meant to be used with only one user. If you want to send the choice the option to two user, use a parallel branch and action for each one, like this:
and then on each branch use the actions @Expiscornovus recommended to capture the intel you need.
