Can I simplify text from Forms into Sharepoint with an expression?

Hiya!
I've got a Form flowing responses into a Sharepoint List however I'd like to use an expression to simplify one of the response categories to a one word answer.

So instead of "People from culturally and linguistically diverse backgrounds" flowing into the list under priority group - I'd like "CALD" if that is the option that the user has selected. In this question of the form there are 5 long responses available - so depending on which the user selects I'd like the list to be populated with a corresponding one word response.

Is this even possible?? So far I've played around with nested if functions with no luck!
