Excel Forms Flow

I have built an Excel Form.  It works OK but I want it to do more.  I think there must be a flow running in the back ground, triggered when a new response is submitted to the form that gets the data and adds a row to the table then sends an email.  Am I right?  I want to get at that flow and edit in some extra steps.  Is that possible?  If so how do I find the flow?

The alternative is to build my own flow from a template.  There is a template called "Track Microsoft Forms responses in an Excel Online (Business) spreadsheet" which would appear to be what I need.  A number of issues with that:

1)  when I add in the details of the form and spreadsheet it auto adds fields in the, "Add a row into a table", step.  They include "Email" which is blank and "item/ResponderEmail" which is prepopulated as "Responders' email".  Are these the same thing?

2) Also includes "Start time", "Completion time" (which are blank) and "item/Submission time" which is prepopulated as "Submission time".  The default process files in the start and completion times quite happily but in the flow there is only one dynamic value comes up if I search for "time" and that is "Submission time".  How do I get the other time

3)  if I ever do get my flow up and running presumably I need to switch off the other flow somehow or both flows will run and I will get two rows in my spreadsheet for every response to the form?

Thank you for your help

Oh!  And by the way, when I try and save the flow it tells me item/Responder email and item/Submission time are no longer in the schema and refuses to save?!?
