Appointments entity doesn't have a dashboard to customize unlike other entities. I need to create customized charts based on week, month and year and display on a dashboard.

The Appointment entity has many restrictions in use. In addition to adding a new dashboard, it cannot add a new form.This is a limitation of 'Appointment' entity.
If you want PowerApps to improve the experience in this area, I suggest you post your opinion in this forum:

You can create standard Dashboards at the solution level: https://docs.microsoft.com/en-us/powerapps/maker/model-driven-apps/create-edit-dashboards and then add you appointment views or charts to that dashboard.
Don't forget to add the Dashboard to your app's site map: https://docs.microsoft.com/en-us/powerapps/maker/model-driven-apps/add-edit-app-components#add-an-artifact-entity-dashboard-or-business-process-flow
