How feasible is it build a flow to parse emails without the parserr tool?

I am experimenting around with parsing emails using a flow. It seems like using the outlook connector is a good start with this. However, it seems like when I look around the community they usually recommend the parserr tool. I do not think I am going to use all of the features that Parserr offers and do not see it being worth the fee. The outlook connector seems to do almost everything I need. Only I am concerned about getting the names from the emails. I was thinking that running one of the default AI builder models against the body of the email would work for this. However, then I will need a way to differentiate between the sender name and receiver name. Also separating between the last person who forwarded an email and who sent the original email would also be desirable. Does anyone have a recommended work around for this? I would appreciate any insight or guidance in the right direction.

    Do you have a specific example to show me what you need?
     
    If you want to get sender name and recipient name you could use "Get user profile (V2)" action to get sender and recipient details.

    You could also use the "Body to text" action in the flow to convert the body to text through HTML, and get the specified data by using some expressions. Please refer these links:
