Hello,
So I am trying to create a "save Assessment" button at the end of a survey that would save all the previous screens with the changes made as we go through the clicks and inputs of the apps screens and when I click this "Save Assessment button" it will save all these screens into a "Assessment #3 file" for example, a Folder that when click will load and create these updated screens with the changes and save them in this folder in the app as a version of it. What is the easiest way to do so?

Do you want to export an app by clicking a button inside the app and the exported file will change with the app's change?
I'm afraid it's not supported to export an app inside an app in powerapps.
There are two ways to export an app:1)when you designing the app, click file->save as, then you will save the app as a package.
2)when in powerapps studio, choose the app->app details->export package, then you will export the app as a package.
In powerapps, you could only export data of this app, not app itself.

Thank you this clarifies things for me. But also leads me to ask how to therefore not reset the dropdowns and checkboxes to their default when closing the app and reopening it since i want to save my changes and the version of the app before exporting it since if the first dropdowns resets then all the app is reset.
