Extract data from form PDF when added to onedrive/Add row to excel

I have a onedrive folder setup for ingest from multiple users.  We all use the same PDF fillable form. I am trying to make a flow that extracts the fillable fields in the pdf and places them into a table in an excel sheet in the parent directory.  I am fairly new to this and have read at least 20 posts for similar situations. Most of them have a section where the users says ~I then created a custom AI model~ with little to no explanation on how that is done.  Im not even sure if that is necessary.  Just looking for some direction.

    This article will guide you how to extract information from documents. You can use that model and train with pdf documents that you have as an example. Then use the model to extract document information via power automate.

     

    There are some other options as well like using pdf actions in Power Automate like from Encodian, Adobe pdf services as well. These are premium actions as well.

    Also I gather there must be a reason you are using a PDF form instead of something like MS Forms or a Power App where the data would be regularly available to pull.

    Maybe there is a way around that limitation so you can more directly gather responses with a different method?

    Correct.  It is a form used by many other offices and is standardized.

    I will read this article and try to see if this solves my problem.  Our company does not have some of the more premium features for 365, so this may be impossible.
