I am using Power Automate to take responses from MS Forms and save them in Sharepoint List. I have another flow that triggers an email when a SharePoint list record is created. There are custom emails that are sent based on the option chosen for a question in form. Now those options are Text type. So if in the future if I decide to change the description of that option, do I need to edit the flow every time? Or is there any workaround for this ?

You would probably need to update the flow if you are using the value in a condition or a switch statement.
You can look at using a lookup list in SP which contains a column for the Option, Email Address, Subject and Body to make it more flexible but without seeing your flow, its hard to tell.
