Hello,

Bit of a newbie with Power Automate and I've only built a few simple flows so far. I'm starting to work on more complex ones and I don't want to end up making a mess.

Are there any official guides or documentation on best practices for Power Automate please?

The official guide is Microsoft's documentation.

Rather than sifting through that (can be out-of-date), I would recommend watching some videos that demonstrate how to accomplish what it is you look to do.

Check out Shane Young, Reza Dorrani, Lisa Corsbie, and April Dunnam on YouTube.
