It comes by default with "Pacific Standard Time", but I want to change it to UTC+2:00 let`s say, how do i write that? Is there a list or something on how we should write timezones?

I'm afraid parse JSON can not achieve this requirement. But you could consider converting the timestamp to UTC+2:00 when you calling the filed:
Using Formula (example):
convertTimeZone('2022-04-19T06:15:00.0000000Z', 'UTC', 'Jordan Standard Time')
