Email Body & Multiple lines of text column formatting

If there isn't a great answer to this, I can live with it, I just think the email looks crummy. The highlighted information below is the value from a multi-line column and it's enhanced rich text. The 2nd screenshot is what the html looks like, so it's doesn't have to do with that.

I'd prefer it be formatted like one of these below:

    Looks like your Eng Notes field is also a Rich text, which might be causing the formatting issue. Can you change that to Plain text?

    @SudeepGhatakNZ That's what I was thinking I needed to do, I'll check with the users and see if they need it to be rich text for any reason. Thanks
