My app has 4 galleries all visible each with its own data source. In one of the galleries the Title field keeps changing back to the original field that PowerApps assigns when you attach a data source to a gallery. It doesn't happen during the day, I make changes, save them, close the app, open the app and the changes are there. BUT when left over night, sometimes I go to edit the app and that Title field has changed back to the original one when the gallery was first attached to the datasource. Not every night. I've droped the data source, reconnected, refreshed, run OnStart... nothing seems to change this. I haven't yet tested clearing my local cache (I will do that next time it happens). Any other ideas or insights are very welcome and appreciated.

Sounds like strange behaviour that I've also seen before. Also, you've tried many of the things I would recommend such as reconnecting the data source, etc.
Try looking into the following functions (if you haven't already) - I've used them in various ways to refresh controls to ensure they show the most up-to-date data:
