Before I go too deep into figuring it out (only to find out it's not even possible), has anyone done anything similar to: "When an email comes in from zhelton@teamifg.com to my email where the subject is just a month and day, first go to the xcel workbook titled "Consolidated Convoso Daily KPI's" and create a new sheet with the same title as the subject of that email. Second, go back to that same email and copy the data onto the new sheet that was just created."

Yes, this is absolutely possible. But "building" it will require a close examination of the email and attachment, and all the details surrounding it. But your description of the flow is 100% absolutely possible.
