I have a SharePoint list that I want to read the Created By or Modified By fields but they do not show up in the data connection. Is this another limitation of PowerApps or is there something that I'm missing?

Well, looks like i solved it. I ended up using this assignment code: ThisItem.Author.DisplayName and now I am getting what I need.

Thanks for the update.
In addition, there are some hidden attributes when connect to SharePoint list, which we could choose to un-hide:
Select the full Screen, under options in right side pane, you should be able to see a list of Fields, find the Author and then click on the Grey Eye icon to un-hide it, then click the ... to choose the display value:
