I have a sharepoint list which my account managers use to submit info. There are a series of choice and notes columns. Can I use flow to copy the list info into the spreadsheet?

Yes, you can export a SharePoint List to Excel. The Add a row to Excel when a new item is added in SharePoint List template can do this for you quite easily and is very easy to setup and configure.

If you want to update the Excel sheet whenever a new item is created in the list, please try with the template @Brad_Groux suggested
About Choice columns, you could just get the value of the field using dynamic content Column name value.
