I start playing with power apps and SharePoint keeps connected to my first test that does not work. How I can reset or connect my list to the new PowerApp that I create?

If you are referring to the Integrated form (in SharePoint) customized in Power Apps, then that is unique to the list and you would need to create a new form for the other list.

First I customized the form from SharePoint but did not work, so I start a PowerApp from scratch and it is publish and connected to SharePoint List but when I go to SharePoint and click on New or Edit, takes me to the old customized form that I did first.
I hope my explanation make sense.

If you have a stand-alone app, simply go to View > Connections, delete your Test List and connect your current one.
You will get some errors from the list names (or any field names) being different, but go through these are fix them to the new reference.
