Parent Business ['Business Units'] defaulting to Organization name? - Super Frustration

I am trying to create a very simple application that will allow me to create a 'Business Unit' which in my use case is being used as company offices.

 

Due to the rules of dynamics, I can have 1 parent business per org, in this case is "Corporate Headquarters" with any number of subset offices underneath as child offices.

 

When I add a new office, the parent business choices acts REALLY WEIRD and only has 1 default option which is our organization name? Sometimes, If I start to type out the letter 'c' then Corporate Headquarters and the other office options show up as options for me to select, but mostly it will just remain as 'fcdevelopment' which is our organization name and I can't even select Corporate Headquarters.

 

My Data config on the card itself I cahnged the DisplayFields and SearchFields to be filtered by ["name"] and left the Items as default being "Choices('Business Units'.parentbusinessunitid"

 

Does anyone have any ideas on why is this happening? It seems to be working for a second, then the next it will not. I have created a TON of apps doing the exact same thing with no issues, yet I can't seem to understand why this is happening with Business Units.
